Wild-caught white pomfret, snap frozen at sea. A small, delicate fish with fine white flesh, very few bones and a clean sweet flavour — the classic choice for steaming whole with ginger and shallot.

Serving Suggestions

• Steamed whole with ginger, shallot and a splash of hot oil and soy — 6 to 8 minutes is plenty at this size.

• Pan-fried until the skin crisps, finished with salt and pepper.

• Braised in a light soy and sugar sauce.
