Over a Century of Traditional Cedar Barrel Brewing
Founded in 1897, Hamasho Soy Sauce Brewery (濱醤油醸造場) has spent more than a hundred years upholding the art of natural brewing. Grounded in the belief that "time creates true flavour", Hamasho ferments in traditional Japanese cedar barrels (kioke) whose timbers carry generations of wild yeast and microflora — a living culture no stainless tank can reproduce.
Product Highlights: Yukyu no Shizuku — "Drop of Eternity"
This is Hamasho's flagship. Where most soy sauce is brewed for six months, this one is left in cedar for three years. The extra time darkens the colour, thickens the body and concentrates the umami into something closer to a finishing condiment than a kitchen staple — a sauce you use by the drop, not the splash.
Taste Profile: Dense and glossy, with dried-fruit sweetness, a long savoury finish and almost no salt sting.
